Salsa Chicken

4 skinless, boneless chicken breast halves
1 package taco seasoning mix
2 cups salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream (optional)


Preheat oven to 375 degrees F (190 degrees C)

Place 1 cup of salsa 8 x 8 inch baking dish.

Empty taco seasoning in ziplock bag, put in chicken and shake.

Place chicken in pan and add remaining salsa on top.

Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.

Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

i make one kinda like that.

-Brown the chicken breasts
-saute an onion then add a can of diced tomatoes to it and any other spices you like.
-cook to reduce the juices a bit
-put tomatoes and chicken in casserole dish and bake for about an hour
-when chicken is on the plate i sprinkle it with mozzarella cheese (zap it for a second if the cheese doesn't melt all the way)
