My daughter loves them made this way....sliced up potatoes, sliced onions and can of mushrooms....make it into layers with some butter or margarine on top....cover with tin foil in oven....serve them w sour cream!!!
I slice Potatoes, add Onion soup mix and some butter and a bit of Veg. Oil or Olive oil and make a foil package. The can go on the BBQ or in the oven.
Really good with sour cream too.

You can make potato skins
Bake the potatoes make sure that they are impecably clean!
cut them in half lengthwise and scoop out the flesh into a bowl
combine the flesh of the potatoes with cheese, onions, bacon (everything is great with bacon right?) you can even add blanched broccoli.
scoop them back into the skins, top with cheese and finish in the oven.

Super easy roasted potatoes
peel and cut potatoes (I do them lengthwise because I think they look nicer)
Toss them in a big bowl with olive oil, salt and pepper....spread them on a large baking sheet (lined with parchment if you want easy clean up)
throw them in the oven 350 for an hour and you are done
You can also add rosemary or sage is also really good. Keep it simple
If you are in a rush, crank you heat to 400-425 and they take about 1/2hr to 40 minutes depending on the size
the trick is not to overcrowd the baking sheet otherwise they boil instead of roasting and will take forever!

Mmmm, Tabtha, I have done that 1st type of potato lots of times really good and easy. I use leftover baked if I have them to make these and call them twice baked or I will do the potatoes in the microwave scoop out the inside and add whatever put it back in an put them under the broiler in the toaster oven till cheese melts on top. My kids love them!

heres one more, and its actually good
boil peeled potatoes with cauliflour, about the same amounts of each, or slightly more potato.
when soft, drain, add milk & butter, salt & pepper and mash all together.
that way you can sneek some veggies in for the kids who dont realize there is cauliflour in there. it also loosens up the mashed potato texture. its a hit here!

This one is really good, and oh so easy.
Wash and peel the potatoes, cut them however you like them.
Put them in a bowl, and toss them with Italian salad dressing.
Bake them as you would any roast potato, (oven, bbq, in foil or on a pan)... the kids really like them.
