there are screencap programs, or there are also plugins that will let you download the video, then use something else to convert it.

If you use firefox get the extension "Download Helper". With it you can download from just about anywhere. It will save youtube videos as a .flv file.

New Real Player will also download YouTube videos .. and any other video type you see anywhere.. just put the mouse cursor over any video screen and you get a little pop up box ...Download this video...very simple.
