Ok, so the best tomato sauce I ever tasted was at a friend's house in Calgary. She made it from scratch. This friend happened to be from the Soo, so I figure there have got to be people out there with good tomato sauce recipes. I would like to start making my own in big batches, and then just freezing it in portions. So if you've got a good recipe, lay it on me!!!

wow, that's a hard one...I make great sauce but wouldn't have a clue how to give you a recipe for it.....but I will try to come up with something

That's cool. I can make a mean sauce from canned tomatoes and fresh veggies, but I'm really looking for guidlines for making it from scratch. No cans, just fresh food! That's why I've always liked cooking more than baking, baking is so precise. With cooking you can mess around more, and really make it your own!

I knew a lady who would make her sauce from scratch. The started with roma tomatoes that she froze whole. When they were frozen she would plunge them in boiling water. The skins then peel off really easily. Then she chopped them and would simmer them like you would canned tomatoes.
She never used tomatoe paste either, just simmered it till it was thick and really great.

I wish I could has her for the recipe but she has alzheimers now and doesn't speak english anymore.

why go through all that buy diced tomtoes in a can .use your food processer.one can of tomatojuice 1 can of crushed. Fry some onions in your pot and celery add your stuff and some hamburger meat if u like.add your spices and some chicken base thats right chicken base cook for 4 hours The windsor Chef"

The reason I'm going through all the effort of making more things from scratch is because I want to have more control over what ends up in my food. Most canned foods have preservatives (many of which are known carcinogens), and also contain Msg. Also, the taste of food prepared from scratch is sooo much better, and I really appreciate all the effort and care that was put into the meals on my plate. Those are just my reasons though, I'm sure everyone has theirs.

I agree kitchen witch fresh is always best.Dirty dont know where the rascals are havent talk to them in a while lol.I need a cook kitchen witch at work you would be great.

Cool, that must be a challenging job at times. Catering to all of the residents dietary restrictions/needs. The only thing that's consistent must be cooking for larger groups.

how do you start with fresh tomatoes?
do you freeze them like someone said?
or just squish em up.
How do you make them into a sauce?

First you have to peel and seed them. The seeding process requires cutting them, so that'll take care of that. They also reduce while you're cooking them too.

I'm confused, do you add water to them?

Yes, just put them in a pot, add spices and onions and such. You use a LOT of tomatoes, and cook all day, so you don't have to add any liquids.
