Poor Man's Perogies

9-12 lasagna noodles
1 ¼ cups of butter
4 medium onions, sliced
10-12 potatoes, peeled and cubed
1 dash of salt and pepper
1 lb of velveeta cheese, cubed
Grated parmesan cheese (as much as you desire)
1 9x13 inch casserole dish


Sauté the onions in one stick of butter until it's tender.

Cook the noodles as directed on the box.

Boil the potatoes, then mash them.

Add the cubed cheese, salt, pepper and remaining butter to the potatoes and mix until well combined.

Put the layer of noodles in the 9x13-inch baking dish.

Layer the 1/3 of onions over the noodles, then 1/3 of the potato mixture.

Repeat the layers, ending with the potatoes on top.

Sprinkle with parmesan cheese and bake at 350 degrees for 30-35 minutes.

I woun't call them "poor mans" I think "smart woman" is better.

I make these quite often too.

We prefer to call them "lazy man's" perogies. /ubbthreads/images/%%GRAEMLIN_URL%%/wink.gif

HUGE hit at potluck parties.

I've made them too, I think that they are too much work to be called "Lazy Mans. We call them Busy womens perogies!

Me and my friends make these except we use instant potatoes and cream cheese in the mixture, no velveeta.
We just call it "Big Perogie"

Seriously though....you have to buy a canister of bacon bits, and SMOTHER those suckers in it /ubbthreads/images/%%GRAEMLIN_URL%%/smile.gif
