View Full Version : Banana Oat Squares

I make these when there are a few ripe bananas laying around that no one is eating. It's quick, easy and healthy for the kids.

6tbsp of butter or margerine
1/2 cup of packed brown sugar
1 Egg
1/4 teaspoon salt
3 mashed bananas
2 cups of quick cooking oats
1/3 cup of chopped Walnuts (optional)

Cream butter and sugar. Add egg and beat well. Add salt and mashed banana. Add oats and nuts. Stir. Spread in greased 8x8 inch pan. Bake in 350 degree oven for almost an hour until firm. Cool and cut into squares.

Your house will smell soooo good too!!

I'll be making these today, as I happen to have 3 bananas here. They sound good, and my kids love anything with oats in them.

lol..good question. I wondered that when I first made them. My guess is the oats.

i have a bag full of brown bannanas in the freezer and was going to make 2 loaves of banana bread, but i think i will make only one and try your squares recipe for the other. sounds really good. i will let you know.

editted to add, they are made and we have tasted them. very nice. only problem is they are still so hot they didnt come out in squares, but it didnt matter, they still tasted good! smelled so good we just couldnt wait.

I tried them. I don't think I baked them long enough because they were too gooey. Not to my liking but it could be too much banana as well since the ones I used were huge.

Maybe we'll try them again. But the house did smell fantastic.LOL

i made them yesterday..mine were a bit on the moist side as well..didn't think i cooked them long enough.. they were really good tho..i just ate the last one. /ubbthreads/images/%%GRAEMLIN_URL%%/laugh.gif

one of the kids said 'too healthy looking, why don't you put some cream cheese icing on them'
lol..it would probably be good.
