When a recipe calls for Heavy Cream What are you supposed to buy?
Do they mean Whipping Cream or Half and Half? Just a little confused, Can you help? Thank You...... /ubbthreads/images/%%GRAEMLIN_URL%%/wavey.gif

Whipping cream. It is cream with a fat content between 30% and 40%

When a recipe asks for heavy cream you can use , half and half, table cream 18% or whipping cream. I usually use the 18% , i find that the whipping cream has a peculiar taste, and the table cream always works for me.

If the receipe involves cooking the cream - I would use whipping cream. I find the half and half can curdle easily.
