View Full Version : cauliflower soup recipe?

its been a few years since ive made cream of cauliflower soup and i sort of forget now. does anyone make it and have a recipe they really like? (yes, i know i can look it up, but im just wondering if there is a tried and tested recipe)

i think i made it one time, just broth , fry onions in oil (i use olive)
add cauliflower , boil then when cooked i use the hand held thingy to puree it
in this case, i dont follow a set recipe, u can add other veggies other than onion and i also forgot to mention potato too, it thickens it
i like things plain and simple , not too many weird spices
bacon might be good on top!

thanks, i made it. ended up searching the net till i found a recipe that sounded like the one i had done and liked in the past. here it is, very similar to what you said.

cook cauliflower in 2 cans chicken broth and one can of water

meanwhile saute onion and celery on low till tender. add couple spoonfuls of flour to the oil/onion mixture to make thick. add to cauliflower broth, also add 2 cups milk.cook & stir. pour into food processor and blend. add salt pepper to taste.

I could tell you all my recipe for Cream of Cauliflower soup, but then I'd have to kill you. :P
