Happy New Year Everyone,

Just wondering if anyone has a recipe for Red Pepper Soup. My hubby likes it and would like to make it for him. He said it is like a puree soup.

1/4 cup margarine or butter 1/4 cup flour
1/2 cup chopped onion 1 can Carnation milk
1 clove garlic, finely chopped 14 oz can vegetable or chicken broth
12 oz jar red peppers, drained & seeded 1/2 tsp salt, 1/4 tsp pepper

melt 2 tblsp butter, add onion & garlic, saute for two min. until soft. Transfer to a food processor and also add peppers, process until smooth. Melt remaining butter, stir in flour. Gradually stir in milk and broth, stirring constantly over medium heat until it boils. Add pepper mixture, salt & pepper. Heat through. Garnish with a dollop of sour cream and sprinkle with chives. Serves four.

I found this recipe in one of my books, but I have never tried it. Good luck!

FANTASTIC!!! We had this at our Christmas party and it was AWESOME!
