for Sweet Little Sister, continued from Soapbox "Rhubarb anyone"

it is juicy, therefore I do not add water. I take out 4 cups of frozen rhubarb, thaw, drain, put in casserole dish. I do NOT add any sugar either.


2/3 cup flour
2/3 cup quick cooking rolled oats
1 tsp. cinnamon
3/4 cup brown sugar
1/2 cup margarine (melted)

Mix flour, oats, cinnamon, brown sugar; add melted margarine. Stir. Spread evenly over rhubarb. Cook at 350 for about 20 minutes, or until rhubarb is fork tender and oat mixture is lightly brown. I sometimes add chopped apples, maybe 1 or 2; or strawberries to the rhubarb. Just to be different.:wink:

it's cooling right now.
a little juicier than usual..but then again i forgot to mix some of the crumble into the rhubard first..like i usually do..
i added strawberries too..can't wait to eat it!
