4 breasts boneless, skinless chicken
ground black pepper
4 plum tomatoes, seeded and diced
2 tbsp sweet red/yellow pepper, diced
2 tbsp parsley, fresh preferred
oregano (to taste)
garlic powder (to taste)
1 can mushrooms, drained
(broccoli and zuccini-optional)
1 cup,(or less) feta cheese, cubed
1 tbsp olive oil
*black olives to toss in at the end*

Arrange raw chicken in baking dish
Mix all other ingredients (except olives) and spoon over the chicken
Drizzle with the olive oil

Bake, (uncovered) at 375F for 30 minutes. Toss olives in after it's cooked. Serve over rice or pasta. Yummy!

PS- I have done this in a barbque with the dish on the upper rack on one side, and the heat on med-high on the other.

It turned out to be delicious! I just made one change by substituting fresh mushrooms for the canned ones.
