There are a number of factors involved but 10 hours is way too long, unless the turkey is going in the oven frozen! See the chart below... I've never cooked a turkey more than 4 hours. The largest I cooked was 19 pounds...but I have a convection oven.

How long to cook a turkey - oven roasting it at 325 degrees F.:
Weight in lbs.
8 12 14 18 20 24
Time in hours
unstuffed 2.75 3 3.75 4.25 4.5 5
Time in hours
if stuffed 3 3.5 4 4.25 4.75 5.25

Be sure to check earlier than the time listed. Convection roasting can go more quickly than expected. Again these times are an average.

Weight in lbs.
8 12 14 18 20 24
Time in hours unstuffed 1.25 1.75 2 3 4 4.25
Stuffed turkey will take longer. Use a thermometer to assure that the internal stuffing temperature has reached 164 degrees F. Because of the added time needed for a stuffed turkey you may need to shield the turkey with aluminum foil to prevent it from over browning and drying out.

My MIL puts her 20 pound turkey in about 9 am and I know she takes it out about 3 30 - 4 pm and it is cooked, she uses a therm. and it is 165 like it is suppose to be. It is juicy and the skin is the best part :)
Does anyone else eat the "oyster" on the turkey. I never heard about it till this year, i guess on the bottom of the turkey is this little piece of meat. It is like a tenderloin of the turkey and is the best piece of meat on it. Who else knows about this?
