so we are eating half tonight baked with the brown sugar. anyone got any recipes for the other half?

Butternut Squash soup. Absolutely wonderful! Just bake the squash until a golden brown (place some garlic cloves on top to bake with it). Boil some water with onion and a touch of apple. When onion is cooked and squash is cooked, take the squash and garlic and place it in a food processor (not the skin of course:P)

Blend adding onion/apple and enough of the water to get the thickness you desire. Season with spices desired; salt, pepper, nutmeg... pretty much up to you. Serve with a dollop of sour cream on top.

Half a squash won't make a very big pot, but if you are looking at making enough for two adults, it will be fine.
