The only thing I ever do is slice flank steak into 1/4" wide strips, soak it in soy sauce and liquid smoke all day and then hang it to dry over night. I heat my oven to 200 then shut it off after not quite an hour then just leave it to drip and hang. I line my oven with tin foil to catch the drips. Nothing fancy but I can't keep it for more than a couple days because it seems to disappear.

I have a dehydrator and wanted to try it for jerky but never got around to it. I've only used mine for herbs.

I beleive home hardware has packages that you just mix. I've tried the turkey one and it's excellent

My husband just creates his own marinades from whatever sauces he likes. Marinates the meat overnight, and in the morning, places them on the dehydrater for about nine hours.
