Salt 1/8 tsp. freshley grated nutmeg
1 lb. 2 oz ricotta Sauce:
2 eggs 1 stick unsalted butter
1 cup freshly grated parmigiano 3 sage leaves
2 Tbsp. potato starch 1 cup freshly grated parmigiano

Cook swiss chard for 10 min. in 1 cup of boiling water. Cool and squeeze excess water out. Combine all the ingredients together in a large mixing bowl. Once the dough is formed, snip off walnut sized pieces and shape into 1 inch patties with your hands. Boil in salted water

Sauce: Melt the butter in a skillet with the sage leaves and pour onto the cooked gnocchi. Sprinkle with parmigiano
