need a recipe for dough and filling

I'm pretty sure that I have a basic recipe that was given to me years ago, I'll try to find it sometime this weekend for you.

6 cups of flour
1 tsp. of salt
2 eggs, beaten
1 1/4 cups warm water
1 tblsp oil
beat water & egg & oil together, mix with flour and kneaduntil blended (very little). Let it sit under a bowl for 1/2 hour. Flour counter lightly with flour and roll out dough to about 1/8 of an inch and cut with a glass or cutter. Fill dough with mixture and seal, using water to seal the edges.

Filling: 10 potatoes cooked and mashed with 2 cups of grated cheddar cheese. (some add onions fried in butter) You can adjust to your needs. I like a strong cheese so I add a few slivers of Imperial Cheese

Try to not roll out your dough more than once, it will get too tough

use some of the water from the boiled potatoes
