does anyone have a recipe for shortbread cookies that are made with rice flour? I have heard that they melt in your mouth :zip:

The recipe I use makes cookies that melt in your mouth too! Sorry, they aren't made with rice flour though. :(

there are quite a few recipe's on-line, most call for 1/3 cup of rice flour added to 2 cups of all-purpose flour. I may just try that.

Yes Yoda ...I did see those receipes on-line
Kinda thought it would call for more than 1/3
of a cup of rice flour ..But worth a try (I guess)
There was a receipe on the box of rice flour
but I find it so diificult to find it in the Groc.
Store ...So I very recently bought a large bag at the
bulk store...I`m all set now !!

I just used a recipe from the Joy of Baking website calling for rice flour. Will let you know how they turn out (they're in the oven lol)

Ok... they were yummy. lol

The recipe is as follows:

3/4 c flour
1/4 c sugar
1/4 c rice flour OR corn starch
1/2 c cold (frozen is best) salted butter. You can use unsalted and just add 1/4 tsp salt.

Preheat oven to 300. Mix your dry ingredients. Then grate frozen butter in to the mix and mix using a light hand. You want it to remain crumbly. Press into a springform tart pan (I used a normal springform pan) and pierce lightly with fork. Using a sharp knife, cut into the "dough" in your cut pattern, but not all the way through.

Bake for 40-50 mins. Watch the last ten minutes and remove at your discretion (a nice golden colour)

Let stand for five minutes on a cooling rack, then remove sides and cut. Allow pieces to cool directly on rack.

I made sum shortbread cookies a few days ago and made fondant for the frosting and out the, into shapes. Turned out pretty decent.
