Any suggestions how to use them in other recipes? I hate to throw them out.

Great for shepherd's pie! ... or home made pierogies.

You could make a mini shepherd's pie from leftovers or a small patch of pierogies if you cut the recipe down... or plan on making a full batch and add the leftover potatoes to the next day's meal.

Fry up some onions, garlic and bacon in a fry pan. (and/or leftover ham)
Put the mashed potatoes into a pot and stir enough chicken broth and milk with them to make a soup consistancy, add salt, pepper, seasoning salt, and the fried onions, garlic, bacon.
Garnish with cheddar cheese.
NOTE: (you might want to whirl the potatoes and broth/milk in a blender or food processor to break up any lumps first)
Makes a thick, hearty soup for these cold wintery evenings.

can of sockeye salmon, egg, onion, celery, seasonings. roll in bread crumbs and fry in hot oil to crisp the outsides and warm the insides. even hubby who hates salmon likes these!
