    Well, if it makes anyone feel any better, between my two jobs I haven't had any time off to bake.....so tonight I"m going home to make seven dozen cookies.....then getting up to go to work for 8am!! [img]/ubbthreads/images/%%GRAEMLIN_URL%%/frown.gif[/img]
    We're all having some fun with this cookie thing!! But I"m looking forward to it!!

    Hubby and I were up till 2am also, but we actually made um...21 dozen cookies. Now I get to go home from work today and ice each one of them, and squirt the little red bows onto them. [img]/ubbthreads/images/%%GRAEMLIN_URL%%/crazy.gif[/img]

    11 dozen for the cookie exchange and or 12 dozen if you are giving a dozen for the Proulx benefit. I think Special K is taking them?

    Ok so mine are done! phew....I hope they stick well...they are in the fridge and I will cut them in the am....cause now I am going to bed...     Same here everything worked out great, I hope we can do it again next year! I'm just getting my tray ready for my son's hockey christmas party and its so nice because I have such a variety of things to bring. It was great meeting everyone, now I will have to come to the next meet and greet because I will know people! Ann

    bbydollnboo made the marshmellow squares.....They are called Rocky Road Bars..I am sure you can find them on the internet...there is chocolate and butterscotch....she made the butterscotch ones

    from the list put up its looks like Gotta Play made them. They are really good. All the cookies were a hit at my sons hockey christmas party.

    I will post the Rocky Road Bars here so everyone can have a hit at them if they want. They are really quite easy to make....and I am glad you enjoyed them!

    350g of semi sweet chocolate or butterscotch chips
    250g marshmallows
    1 can of eagle bran
    2 tablespoons of margarine
    Optional-2 cups of nuts

    Melt the chip, eagle bran and margarine in a heavy saucepan
    Remove and put in a large bowl
    Combine marshmallows and fold in mixture
    In a pan (13x9) line with wax paper and pour mixture in and chill for 2 hours or until firm
    Remove from pan and wax paper and cut into squares

    Thats what I thought Tasma, but I didn't know for sure. But does anyone know the recipe? I'm pretty sure we got the recipe card, but i think I accidentally threw it away.

    Sorry everyone...the holiday's found me unbelievably and unexpectedly busy...Here's the recipe for the coconut tarts:

    First prepare the pastry (I think it's the basic tendeflake recipe) Prepare shells

    For the coconut jam filling:

    Cream:
    1/2 cup butter
    1/2 cup sugar

    Add:
    2 eggs (one at a time, beating in)

    Stir in:
    1 cup coconut
    1 tsp vanilla
    * jam Raspberry (seedless is best) - fill 1/2 tsp each tart first (be sure not to fill to much) just about the size of a baby spoon works.
    Then fill 2/3 full with cream mixture

    Cook at 350 degrees C 15-20 (use small tins for tarts and shells)

    very important you don't overfill with the jam as it will overflow and burn the jam!!
