    Default Chicken Breasts in Orange Sauce

    3 or 4 boneless skinless chicken breasts
    Extra virgin olive oil and a tablespoon of butter if you wish.
    sprinkle the chicken breasts with salt and pepper and brown them in the olive oil/butter.

    Mix together
    2 TBSP flour
    2 TBSP sugar
    1/4 tsp dry mustard
    1/4 tsp cinnamon
    1/4 tsp curry powder (use ginger if you prefer)

    Stir the mixture into the pan juices along with

    1 1/2 cups orange juice.

    Cook until mixture boils and thickens a bit, and then put chicken breasts back into pan, spoon some of the mix over them, and let them simmer for about 20 minutes or until tender.
    Serve on a bed of rice, and spoon the sauce over all.
