I got an email that had some recipe ideas that I wanted to share. I haven't tried them yet. They looked good!

Tortilla Chip Chicken Casserole
Makes 4 servings

1 can cream of mushroom soup
1 can cream of chicken soup
1 cup salsa
1 14 1/2-ounce bag nacho tortilla chips (Doritos)
4 boneless skinless chicken breast halves
1 1/4 cups milk
1/2 cup shredded cheddar cheese

1. Preheat oven to 375 degrees

2. In a large bowl, combine the soups, salsa and milk. Mix well until smooth. Layer a 9x13 inch baking dish with the tortilla chips, then the chicken, and then pour the soup mixture over.

3. Bake at 375 degrees for 20 minutes. Remove from oven, top with the cheese and bake for 10 more minutes, or until cheese is bubbly.

Beef Steaks With Seasoned Butter
Serves 4

4 beef tenderloin steaks 1-inch thick steaks of your choice
Salt and freshly ground pepper to taste
Flavored Butter (recipe below)

Flavored Butter
1/2 cup butter real, softened
2 teaspoons lemon juice fresh
2 teaspoons parsley minced fresh
1/4 teaspoon salt
1/8 teaspoon black pepper freshly ground

1. To cook steaks, barbecue or broil about 5 inches from heat source for 5 to 7 minutes on each side or cook to desired doneness. Sprinkle with salt and pepper.

2. Serve sizzling hot, topped with seasoned butter of your choice.

Flavored Butter:
1. Combine ingredients and beat until fluffy.

2. Cover and refrigerate until ready to use (makes approximately 1/2 cup).

BBQ Pork Sandwiches
Makes 10 servings
Prep: CROCK POT - Start in the morning
This is a large recipe, but you can freeze the leftovers and they make a quick and easy lunch or dinner for later.

1 14-ounce can beef broth
3 pounds boneless pork ribs
1 18-ounce bottle sweet baby ray's barbecue sauce (or sauce of choice)
10 Kaiser rolls or large hamburger buns

1. Pour can of beef broth into slow cooker, and add boneless pork ribs.

2. Cook on High heat for 4 hours, or low for 8 hours or until meat shreds easily.

3. Remove meat, and shred with two forks. It will seem that it's not working right away, but it will.

4. Preheat oven to 350 degrees. Transfer the shredded pork to a large oven safe casserole dish and stir in BBQ Sauce.

5. Bake in the preheated oven for 30 minutes, or until heated through.

6. Serve on Kaiser Rolls
