Our secretary at work made this for a BBQ it was really good. She layered ice cream sandwiches on the bottom put more icecream and caramel syrup and nuts or cookie chunks or chocolate chips in the middle then topped with more ice cream sandwiches whipped cream and caramel syrup. She re froze it hard and cut and serve. It was easy and awesome. I can get the actual recipe if anyone is interested. I figured with all the ice cream sandwiches on sale right now it makes a quick and easy summer cake.
