Apple Cheesecake
Crust:
1/2 cup of butter
1/3 cup of sugar
1 cup of flour
Filling:
1 package (8 oz.) of cream cheese
1/2 cup of sugar
1 egg
1 teaspoon of vanilla
Topping:
1 1/2 pounds of apples
1/4 cup of sugar
1/2 teaspoon of cinnamon
1/4 cup of sliced almonds
For the crust, cream the butter and sugar then add the flour and mix well.
Press the mixture into the bottom and half way up the sides of a 9" springform pan.
For the filling, mix the cream cheese and sugar then add the egg and vanilla and blend well. Spoon over the crust.
For the topping, core, peel and thinly slice the apples.
Combine the sugar and cinnamon then sprinkle over the apples and toss to coat the apples on both sides.
Arrange the apples in a pinwheel fashion over the filling and sprinkle the almonds over the top.
Bake at 450 degrees for 10 minutes, then reduce the heat to 400 degrees and bake for 25 minutes.
Cool to room temperature (3 to 4 hours) and then refrigerate until serving.
