    Default Turkey Leftovers

    Turkey time usually means being creative with leftovers, I know I'm a little late as most of you probably are done with them, but maybe folks will put something inspiring on here and we'll give them kudos at the end of December.

    Anyway, below is Turkey Quesadillas for a start.

    measurements not required as you just make 'em how you like 'em:
    shredded cheese
    shredded turkey
    soft tortillas

    warm the tortilla in a pan, sprinkle with cheese, then turkey (or be a rebel and go with the turkey 1st ), top with another tortilla or if you're not really good at flipping a whole quesadilla, just fold the one you have in the pan. Cook for about 3 min, flip, give it another minute tops and start again.

    these are great with cranberry sauce or jelly on the side as well as sour cream and salsa.

    Turkey Spread-cut or put it in the food processor add pickles,celery green onion a lil pickle juice and miracle whip or mayo, makes yummy sandwiches.

    Cybers Own.

    Pour Turkey drippings minus the fat and spread to cover cassarole dish.

    ADD

    Cook off sliced carrots,add that to the cassarole dish plus some of the juice left over from cooking the carrots..Nice flavor.

    I like Peaches and Cream corn,i like to add as much as i did carrots.

    Now mix in turkey ( Chicken) add as much as you desire.

    I cook off celery cut into tiny pieces as well as onions and pan fry till soft at low heat,one done mix evenly into dish.

    For my-self i like to add bell red bell peppers only if all interested parties agree.Again i cut into small pieces and cook on slow heat.

    I then Add Philadelphia Cream cheese..(about half a package) and cut into small pices and spread evenly through-out dish.

    I add some salt and pepper.

    I bake at aprox 375 degrees for 15-20 minutes to let flavors mix well to-gether.

    Let cool for 5 minutes then add (layered evenly) mashed potatoes.

    Spreading cayene pepper on the mashed potatoes.

    I then bake at 500 degrees for 5 minutes or till potatoes turn slightly brown.

    This way the top element is on and the cassarole contents do not have a chance to steam the potatoes from below.

    Put your left over turkey in a cassarole dish. Add a can of cream of brocoli soup and left over gravy if you have some.
    Then add a vegtable.. what ever you have really is ok. I used frozen corn when i made this yesterday, Fresh brocoli would be very good also.

    Mix up some bisquick and spoon it on top..

    Bake at about 400 for half an hour..
