Default Tried & True Crock Pot Recipes?

I just got a brand new programmable crock pot with all the bells and whistles for christmas and I am wondering if anyone has some favourite crock pot recipes that they are willing to share in this thread. I have 2 toddlers, so kid friendly is alwyas good, too! Thanks, in advance - can't wait to start cooking!!!

Perhaps, something a little less 'crunchy'?

Yes, but I was hoping for a few that some of you have already tried and tasted... I hate trying out new recipes only to discover that they are inedible.

    Chicken Enchilada Casserole

2 cans of cooked chicken (in the tuna isle)
2 cans of cream of chicken soup
1 can of chicken broth (optional)
12 corn tortillas (or flour if you prefer)
2 cans (4 oz) of chopped chiles
2 (12 oz) bags of shredded cheese (cheddar or mexican blend)

    Rip tortillas into strips
Mix soups, chilis, chicken, & cheese in a bowl (add chicken broth to make a creamy mixture if you drain the chicken & chilis - I don't and find that the juice makes enough liquid)
Layer the tortillas & mixture in a 9x13 or crock pot (should end up with 2-3 layers depending on the dish)
Cook in a crock pot for a few hours, or 30-45 minutes in a 350 degree oven.

You basically just want everything to melt & get bubbly, and for the tortillas to get soft.

    PARMESAN CHICKEN

1 pkg dry onion soup mix

    1 cup uncooked rice

    4-6 boneless skinless chicken breasts

    1 1/2 cups milk

2 cans cream of mushroom soup

grated Parmesan cheese, salt, pepper, butter or margarine

In a medium bowl, combine onion soup mix, milk, cream of mushroom soup and rice.

Lay chicken in crockpot. Place a pat of butter or margarine on each piece of chicken. Pour soup mixture over chicken. Salt and pepper to taste (I find you don't need salt unless you are using low sodium mushroom soup). Sprinkle with parmesan cheese.

Cook on low 8-10 hours or high 4 hours.

    Asian Pork Roast

1 3-5lb. pork roast (or pork chops work too)

    1/4 c. apricot preserves

    1/4 c. soy sauce

    1 Tbsp. Ketchup

    1 clove garlic finely chopped

Add all ingredients to crock pot and cook on low 6-7 hours. Serve over rice. Yummy!!

    Sticky Chicken

    4 tsp salt

    2 tsp paprika

    1 tsp cayenne pepper

    1 tsp onion powder

    1 tsp thyme

    1 tsp white pepper

    1/2 tsp garlic powder

    1/2 tsp black pepper

Rub on raw chicken. Let sit overnight. Place in crockpot on low for 8-10 hours.

    CrockPot Lasagna

1 lb. ground beef or turkey

    1 med. onion, chopped

    26 ounces spaghetti sauce

    12 oz. cottage cheese

    1/2 grated parmesan cheese

    1 egg

    12 oz. uncooked lasagna noodles

12 oz. shredded mozzarella cheese, divided

Brown the ground beef and onion in skillet.

Drain. Add the spaghetti sauce and simmer for

5 to 10 minutes. In a seperate bowl, combine

the cottage cheese, parmesan, egg, and the

mozzarella cheese except for 1/2 cup. Mix

thoroughly. Spoon a layer of meat sauce onto

the bottom of the crockpot. Add two layers of

uncooked lasagna noodles, breaking up the noodles

as needed to fit. Top with a layer of the cheese

mixture. Repeat with sauce, noodles, and cheese

mixture until all are used. Sprinkle top with

reserved 1/2 cup shredded mozzerella. Cover; cook

on low for 6-8 hours or on high for approximately

    3 hours.

    Brown Sugar Chicken

    Boneless skinless chicken breasts

    1 Cup brown sugar, packed

    2/3 Cup vinegar

2-3 Tbsp. minced garlic ( I only used one; DH isn't into garlic)

    1/4 Cup lemon-lime soda

    2 Tbsp. soy sauce

    1 Tsp. black pepper

Place chicken in crockpot, mix all other ingredients together and pour over chicken.

Cook on low for 6-8 hours.

I served mine with white rice and sugar snap peas.

    Crockpot Chicken N Stuffing

2-1/2 to 3 lbs boneless chicken breasts

1 box of bread dressing (stuffing mix)

    1/2 can of chicken broth

1 can of cream of chicken soup

Place all ingredients in your slow cooker. Cover and cook on low for 4-6 hours.

Chicken & Dumplings - Crock Pot Style

    4 skinless, boneless chicken breasts

    2 Tbs. butter

2 cans condensed cream of <your choice> soup

    1 onion, diced

    water to cover

    1 package refrigerated biscuit dough

Place chicken, butter, soup and onion in crock pot.

Cook for 5-6 hours on High or until chicken is done.

About 30 minutes before serving, tear biscuit dough into pieces and place in soup mixture. It's done when the biscuits are cooked.

***This is probably my favorite crockpot recipe of all time***

    Cream Cheese Chicken

4 boneless skinless breasts of chicken

1 packet of dry Italian Salad Dressing Mix

    3T of Butter

2 cans of Cream of Chicken Soup

    8 oz. Cream Cheese

In crock pot set to low add Chicken, Butter and Italian Dressing mix. Cook on low for 6-8 hours - add soup and cream cheese, heat until cheese is melted. Serve over fettucine, or any kind of pasta or rice.

    Slow Cooker Chicken Cacciatore

Easy slow cooker chicken cacciatore. Serve over angel hair pasta

4 skinless, boneless chicken breast halves

2/3 (28 ounce) jar spaghetti sauce

    1-1/3 green bell pepper, cubed

    5 ounces fresh mushrooms, sliced

    2/3 onion, finely diced

1 tablespoon and 1 teaspoon minced garlic

Put the chicken in the slow cooker. Top with the spaghetti sauce, green bell peppers, mushrooms, onion, and garlic.

Cover, and cook on Low for 7 to 9 hours.

    Pulled Pork

    (Crockpot)

    1 T oil

    2 chopped onions

    6 minced garlic cloves

    1 T chili powder

    1/2 tsp black pepper

12 oz chili sauce (1 small bottle)

    1/4 cup brown sugar

    1/4 cup cider vinegar

    1 T Worcestershire

    3 lb. pork shoulder

Saute the onions in the oil until soft. Add garlic, chili powder, and pepper and cook another minute or so. Add chili sauce, brown sugar, vinegar, and Worcestershire sauce. Heat till boiling stirring constantly.

Put the pork shoulder in the crockpot and pour the sauce over it. Cover and cook on low 12 hours or on high 6 hours, until pork is basically falling apart. (Longer never hurts.) Shred the meat with a pair of forks and return to the pot and keep warm in the sauce. Serve over buns.
