    Default rhubarb

    what are some things you make with rhubarb? i love it. i LOVE plain old stewed rhubarb (cold) with hot buttered toast. or hot stewed rhubarb & ice cream.

    or my moms rhubarb custard recipe, it is so easy. i used a frozen pie shell, filled it with chopped rhubarb, covered it with 4 beaten eggs and 3/4 cup of sugar. baked it for 20 min at 400, then 40 min at 350. it was so good!

    id like to hear what others do?

    My mom makes a GREAT rhubarb cake. Its amazing. I don't have the recipe but if your interested I can get it for you.

    This is really good, adjust the sugar as required.

    4 cups diced rhubarb
    4 tbsp water
    1/4 cup white sugar
    1/4 tsp salt
    TOPPING
    1/2 cup butter/margarine
    1 cup brown sugar
    2/3 cup flour
    2/3 cup quick cooking rolled oats
    1 tsp cinnamon

    in a buttered 8" square baking pan, combine rhubarb, water, sugar and salt.

    Rub butter/margarine into combined brown sugar, flour, oats, cinnamon until crumbly. Bake at 350 for 40 minutes or until fruit is tender and top browned. Serve with ice cream.

    I also use apples - omitting water, sugar, salt. Genny

    I make something similar to that as well... only I add in some yummylicious strawberries with the rhubarb. [img]/ubbthreads/images/%%GRAEMLIN_URL%%/smile.gif[/img]

    These are also very good!!

    RHUBARB STREUSEL MUFFINS

    Streusel topping:
    1/4 c. brown sugar
    1/4 c. chopped nuts
    1/2 tsp. cinnamon
    1 tbsp. flour
    1 tbsp. butter

    Muffin Batter:
    2 c. cut up rhubarb (1/2 lb.)
    1 c. brown sugar, divided
    1/2 c. butter, melted
    1/4 c. milk
    1 egg
    2 c. flour
    1 tbsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. cinnamon

    Heat oven to 425 degrees. Combine streusel ingredients with a fork and set aside. In small sauce pan, simmer rhubarb until tender (about 10 minutes). Add 1/2 cup brown sugar and butter. Cool slightly. Add milk and egg. Blend well. In another bowl, mix flour, 1/2 cup brown sugar, baking powder, soda, salt, and cinnamon. Add rhubarb mixture to dry ingredients and blend until just moistened. Fill greased muffin cups 1/3 full with batter. Sprinkle with 1/2 the streusel topping. Repeat with remaining batter and streusel. Bake for 15 to 20 minutes.

    oh, that sounds good too! i should have checked this earlier, i just made some plain old rhubarb custard (minus the crust).

    Heres my Moms recipe:

    1 1/2 cups sugar
    1 ett
    1 tsp baking soda
    1 cup of buttermilk (or sour milk)
    1 tsp vanilla
    1/2 cup oil
    2 cups of flour
    2 cups chopped rhubarb
    (cinnamon & white sugar for garnish)

    Beat sugar, oil, egg, and vanilla together. Add baking soda to buttermilk and add to sugar mixture, alternating with dry ingredients. Add rhubarb. Pour batter into a 10 inch square pane. Sprikel with cinnamon and white sugar. Bake at 400 F for 15 minutes, then turn oven down to 350F for an additional 20 minutes

    It is moist the topping is wonderful. This cake is yummy! like it better than my muffins.

    babzz, it is worth it! i also made the cake at work and had to give the recipe away several times. its a real hit!!!

    No buttermilk isn't necessary, your better off to use sour milk.

    Sounds gross I know but for some reason its just better.

    Just add a bit of vinegar to the milk and let it sit about 5 minutes. Works like a charm.

    I sent hubby out to get the buttermilk.. then my mom came by and told me about the vinegar and milk... anyway.. the cake was a hit...

    Sorry I couldn't answer sooner, I was away for the weekend.

    I'm glad you liked it regardless, for next time you'll know not to bother with the buttermilk.
