    Default Guacamole Recipe anyone?

Does anyone have a tried and true Guacamole recipe?

I made some a couple of weeks ago and it was ok, but I'm going to a Cinco de Mayo party this weeked, and was hoping to do better.

    Thanks

I don't have a receipe but this is how I make it

2 avocado's chopped (but not fine)
a couple of green onions chopped
    plum tomtato diced
jalapeno's (depending if you want it hot or not)
    juice of lime

I just mix everything together with some salt & pepper to taste

just don't make it to far in advance or it goes brown

I got this recipe in Mexico from the resort I stayed at:

    2 avocados, peeled
    1/3 cup onion, chopped
1/2 jalapeno chile pepper, chopped fine
1 medium tomato, peeled and quartered
    1 tablespoon lime juice
    1 1/4 teaspoons sugar
    1/4 cup sour cream

Prepare all ingredients. Place the avocados, onions, jalapeno, tomato, and lime juice in a food processor and process on pulse till blended. Add sugar and sour cream and mix well. Place pit from avocado back into bowl to prevent browning.

If you want a chunkier guacamole, mash the avocado by hand with a fork, then add the other ingredients.

this is one that always gets rave reviews!!

    2 avacados
    8 oz cream cheese
about 2 tbls. finely chopped onions
    dash of hot sauce
    dash of garlic salt
    dash of cyanne pepper sp.

mash your cream cheese to a creamy consistancy
add avacados,, mash together with a fork,, you can add a little lemon or lime juice , but i don't
    add remaining ingredients and blend
put the avacado pits in until it is time to serve,, it is suppose to help it from turning brown
put in fridge for at least 1 hr,, stir before serving
    serve with nacho chips
i know is doesn't sound like much,,, but there is never any left over when i make it!!

If you have to make it a couple of hours before you go somewhere, you can rinse the pit from the avocado and place it on top of the guacamole. This helps stop the guacamole from turning brown.

I ended up using Someguys recipe, it was really great. The addition of the sour cream made a big difference.
Thanks guys - next time I'll try corky's - I didn't have cream cheese at home.

If I'm just making one little serving for myself, I mush up one little avocado and put some salsa in it! Good enough!

    Otherwise:
    Avocados
    Tomato
    Lemon juice
    Jalapenos
    sour cream
    salt & pepper

I tried onions in it once but I didn't like it at all!

It is a direct sales company that is 100% Canadian, woman led, family owned from B.C.
They sell fantasic spices, dip mixes, soup bases, etc. They are very reasonably priced. I'm hooked on their products! They have a web page, google Epicure Selections. If you're interested in seeing a catalogue please let me know. I'll try and post some recipes from their cookbooks later this week.
