    Default lemon pie filling

    i have a few boxes of lemon pie filling mix to use up - any good recipes out there OTHER THAN lemon pie - I would like to try something different

    Lemon Meringue Cake

    cake:
    1/4C softened butter
    1/2C sugar
    1 egg plus 2 yolks
    1C flour
    1tsp baking powder
    1/3C milk
    1/2tsp vanilla

    cream butter and sugar. add egg and yolks, mix well. combine flour and baking powder; add to creamed mixture alternately with milk. mix well, add vanilla. pour into a greased and floured 9in round pan. bake @ 350 for 25-30 minutes. cool in pan for 10 minutes before removing to wire rack.

    filling:
    2 yolks
    1C water
    3/4C sugar
    1/3C flour
    1/2tsp grated lemon peel
    1/4C fresh lemon juice
    1tbsp butter

    In a pot combine yolks, water, sugar, flour and lemon peel. bring to a gentle boil over medium heat. cook, stirring constantly until thickened (about 20 minutes)
    stir in lemon and butter.

    meringue:
    4 egg whites @ room temp
    1/2tsp cream of tartar
    1/2C sugar

    beat eggs until foamy. add cream of tartar. beat on high for 1 minute. add sugar 1tbsp at a time. beat well after each addition. beat until stiff peaks form (about 3 minutes)


    Place cake on baking sheet. spoon filling onto cake to within 1/2 an inch of the edge. carefully spread meringue over filling - sealing to edge of the cake and down the sides.
    bake @ 350 for 12-15 minutes. until merignue is nicley browned.


    **i have never made it with pie filling but i imagine it would be the same..
    i haven't made this in a long time, thanks for reminding me about it.

    make a white or golden cakemix into cupcakes
    cut a circle out of the top of each cupcake..angling the knife so that the hole is funnle shaped and about an inch deep or so
    fill hole with lemon pie filling..replace cake piece..dust with icing sugar.
