    Default Duck Recipes

    I have about 45 ducks to put away for the winter and I've never had it before.

    What I need (desperately) are ideas for duck recipes. How do you like your ducks done?
    So far I've got recipes for duck fingers and I'm thinking I'll do some as Duck Kiev, but I really have no idea what to do with them. We think we're butchering ourselves and skinning them so the majority is just breast meat.

    I'd like to hear from the hunters to the kitchen magicians.

    Loopy, are they tame ducks?
    IF they are they are wonderful just roasted. Don't stuff them with traditional bread stuffing, it will be gross. We stuff ours with pitted prunes and apples. It absorbs the fat and adds a nice flavour.

    I heard turnips, parnsips misc gourds etc do the same thing. Never tried though....

    Thanks Ma03, I'll give it a try. They are tame ducks, muscovies. We tried it in a stir fry and it was tough so next will be a sweet and sour to see if it helps tenderize it.
