    Default Recipes for Goat?

    Looking to try it and want to know what people would recommend. Never had it before but the little monster keeps destroying the barn.............so we're going to have some to cook up.
    I hate curry, so recipes that don't have any are quite welcome.

    Goat Meat Chili

    2 lb goat meat, small cubes 1 (32oz) can crushed tomatoes
    1 lb. hot Italian sausage (casing removed) 1 (16oz) can pinto beans
    2 large onions, diced 1 (16oz) can brown beans
    6 cloves garlic, diced 1 (16oz) can red kidney beans
    1 Tblsp. cumin Garnish:
    1 Tblsp. paprika Chopped scallions
    1 Tblsp. chili pwd. Sour cream
    2 cups water Shredded cheese
    Brown the goat and sausage in a large Dutch oven. Remove the meat and set aside. Drain off the fat and set aside about 2 Tblsp. Saute the onions and garlic, add the spices then add the tomatoes, water and meat. Simmer for about 1 1/2 hours then add the canned beans and simmer for another 30 min. Serve with the garnishes

    Goat and Vegetable Casserole

    1 (10oz) jar lima beans, or frozen 1/4 tsp thyme
    1 1/2 cup sliced carrots 1 Tblsp. vegetable oil (or bacon fat)
    1 cup boiling water 6 tomatoe slices, 3/4 inch thick
    1/2 cup vegetable juice 2 Tblsp grated Parmesan cheese
    1 1/2 lb. goat meat 1/2 tsp. salt
    1 1/2 tsp. salt
    2 small chopped onion

    Add lima beans and carrots to boiling water and cook until tender, about 15 - 20 min. Drain and save the water. Cook the ground meat and onion in oil until browned. Drain off the oil. Add soup, vegetable water, vegetables, salt and thyme. Mix well and pour into a 2 quart casserole . Arrange tomatoe slices on top and sprinkle with salt and cheese. Bake at 350 F for 35 - 40 min.

    Thanks Yoda! I appreciate it. Strange to realize that the rest of the world eats it, but we've never favoured it in North America.

    You're quite welcome. I don't believe that I have ever eaten Goat, although my mother was famous for cooking wild game and such and telling us the next day.
