For something savory, try calamata olive tapenade spread on slices of a French loaf topped with plain softened goat cheese, you won't regret it.

get the square sandwich bread from across the river or order some blue loaves from superior bakery and make simple yet elegant tea sandwiches.
just a few suggestions from about.com
    cucumber and mint
    Prep Time: 15 minutes
    Total Time: 15 minutes
    Yield: 36 finger sandwiches

    Ingredients:
•1 loaf white bread (such as buttermilk bread)
•1 thinly sliced English cucumber (peeling is optional)
•The leaves from 2 large sprigs fresh mint (chopped or whole)
    •Softened butter
    •(Optional) lemon juice, to taste
•(Optional) salt and pepper, to taste

    Preparation:

1.For every two slices of bread, spread both slices evenly and thinly with butter.
2.Cover one side of the sandwich with sliced cucumber in one to two layers.
3.Add a thin layer of fresh mint.
4.Season with lemon juice, salt and/or pepper.
5.Put the slices together, cut off the crusts and slice the sandwich diagonally two times to create four triangle finger sandwiches.

    Tuna and Celery
    Prep Time: 5 minutes

    Total Time: 5 minutes

Yield: 16 small triangle tea sandwiches

    Ingredients:
•4 small slices whole grain bread, ends trimmed
•1 can solid light tuna packed in oil
    •3 tablespoons mayonnaise
•1/2 small stalk celery finely chopped
•1 top from green onion, diced
    •1/2 teaspoon dried oregano
    •pinch cayenne pepper
•salt and freshly ground black pepper to taste

    Preparation:

Break up tuna with a fork into smaller chunks. Mix in mayonnaise, celery, green onion, oregano, and cayenne. Taste and add salt and pepper. Mix again.
Divide tuna mixture into four portions and spread each portion onto one slice of bread. Top each portion with another slice of bread. Cut each sandwich into four triangles. Serve.

    goat cheese and Watercress
Yield: 4 small triangle tea sandwiches

    Ingredients:
•4 small slices cinnamon raisin bread, ends trimmed
    •2 teaspoons salted butter, softened
•2 ounces goat cheese, room temperature
•1/4 cup watercress leaves picked off stems, plus extra sprigs for garnish
    •1/4 cup toasted pecans, chopped

    Preparation:

Divide the goat cheese into four portions and spread one portion onto each trimmed slice of cinnamon raisin bread. Divide watercress leaves into two portions and place on top of two slices of the bread, and cover with the other un-topped slices. Spread the softened butter around each sandwich. Cut each sandwich into two triangles.
Place chopped nuts on a plate. Dip the two buttered sides of each triangle into the nuts to coat. Place on serving dish and garnish with watercress sprigs.

    classic chicken salad
    Ingredients:
•2 small slices brown bread, ends trimmed
    •1/2 cup diced cooked chicken
    •2 tablespoons mayonnaise
    •1 tablespoon chopped celery
    •1 tablespoon minced fresh tarragon
    •salt and pepper to taste

    Preparation:

Mix together the diced chicken and mayonnaise. Stir in the chopped celery and tarragon. Add salt and pepper to taste. Spread chicken salad on one slice of bread, top with the other slice and gently press together. Make a vertical and horizontal cut across sandwich to make four small square tea sandwiches.

You have to use Calamata olives. Add a bit of olive oil for some moisture, a pinch of chopped garlic (not much), some finely chopped roasted red peppers, and (if you want) a couple of anchovies. Put everything into a blender and mince until the olives are finely chopped. Spread the goat cheese on the french loaf, then top with a dollop of the tapenade, .... enjoy.

my suggestion is the cream cheese , tortillia roll ups. you can use any filling you like, and there are differrent colored wraps now,,, and you can make them ahead of time,,, they cost very little, and go a long way! using different colored wraps, the pinwheels look great on a platter, with parsley and grape tomato garnish!

my favorite is the salmon cream cheese with a garlic stuffed olive in the middle. arranged on the place so the nice cut side of each olive shows.
