chicken supper tonite, help

we have one very very large chicken breast that is left over from bbq last nite. it is just cooked, no sauce or flavourings. i am wondering what to make with it. i see several recipes that call for cubed cooked chicken so i know i can find something. does anyone have any ideas or recipes? ill be looking through my books.

Cut chicken into strips, dip into yogurt and dredge in crushed flavoured tortillas say from Hostess or equivalent. Cook long grain rice adding whatever veggies you enjoy and serve over fried chicken strips. Not a single nay in a family of eight so far.
For an added treat change what you cook your rice in from water to chicken stock, beef stock, tomato juice whatever. Limited only by your imagination.

that sounds good anapeg. do you use the already cooked leftover chicken and reheat it that way. i ended upmaking a very boring 'easy chicken noodle' with mushroom soup, milk, egg noodles and the cut up cooked chicken. no flavour.
