Sorry I kind of just left without really saying goodbye to everyone, I had to pick my son up at his friends house at 8pm last night. he thought he was going to the cookie exchange until he got a call from his friend! But it was better, there was alot of people there already. A summer pot luck would be a good idea, it gives me something to look forward to, I hate winter! MMmmm summer, hottub, BBQ, warm, I like it!

Houlegan..and everyone else. Now I wish my place was a little bigger. Not that I minded at all that there were extra people, more the merrier, just didn't expect it But it was nice.... Pot luck in the summer would be good I have a huge back yard and deck so we won't feel so crowded. We can call it Christmas in July....

I am requesting anyone who didn't include a recipe to please post it in here. Some of the stuff didn't have recipies and and they are so good I would like to try and make them. I just had one of the peanut butter cookies which was Awsome and the bars that had chocolate spread on it...They were wrapped in christmas bags....those were good but no recipe please i would like it. I haven't had a chance to try everything. Unfortunately if I did I would be sick so a little at a time.

For the Ritz mints treats, Ma03, I tried mixing the chocolate with the mint extract and it seized up? Any suggestions?

Mine were simple too just a lot of mixing.

1 pound unsalted butter,
4 cups of flour
2 cups icing sugar
1 tablespoon of vanila
mix in a large bowl with hands until makes a big ball of dough (takes some time and works well will butter room temp!)

Roll out and use cookies cutters to cut.
Place in oven 350 i do believe for about 10-15 min until starts to lightly brown.
leave on pan until cools then remove.
If you try to move while still hot they may crumble.
Then decorate.

yeah Ma03 I knew that but was wondering if you knew or anyone else how to get the extract to mix in with the chocolate chips because I couldn't.

Opps sorry tasma lol

I would think maybe its that your mint extract has been refridgerated. Perhaps if you warmed it a bit?

I'm not too sure what else - the only other thing is that perhaps the extract has water in it? Water into hot melted chocolate will cause it to seize.

Just a lil note for the Peanut Marshmallow squares....Cut them when they are cold with a butter knife or you will have a bunch of mangled squares like I did! lol
